What the water type actually changes
A PEM (solid polymer electrolyte) generator does not need dissolved minerals to conduct current. The membrane itself carries the charge between the plates. That is different from the old carbon-electrode ionizers, which relied on tap water minerals to complete the circuit.
So the water source you pick changes two things: how much scale builds up on the plates, and how clean the taste stays. It does not change how much hydrogen you get, as long as the unit is working.
This trips people up because the old advice still circulates online. A lot of hydrogen water forums repeat "use mineral water" without asking what kind of electrode is actually inside the bottle being discussed. Ask that question first, before you buy bottled spring water for no reason.

Why minerals do not help a PEM unit
People assume more minerals means a better reaction, because that was true for old-style ionizer pitchers. A PEM generator works differently. Current moves through the membrane, not through dissolved salts in the water around it.

- Calcium and magnesium precipitate onto the platinum-plated electrode during each cycle.
- A thin film builds up, cycle after cycle, if it is never cleaned off.
- Output drops gradually before you notice a hard failure.
- A citric acid descale usually restores full output.
If your kettle scales up, your generator will too.
Picking a default source for daily use
If you want one answer and do not want to think about it again, run RO water every day. It works the same whether your water is hard or soft, and needs less maintenance over a year of daily cycles than anything else on the list.
Distilled is a close second and is easier to find in a pinch, a jug from any grocery store works. Filtered tap is fine as a backup if your municipal supply already runs soft, but check your local water report before assuming that.

Can I use bottled mineral water in a hydrogen bottle?
You can, but it is not the best choice. The minerals do not improve hydrogen output in a PEM generator and they raise your scale risk over time. RO or distilled water performs the same and stays cleaner.
Does spring water make hydrogen water taste better?
Some people prefer the taste, but it has nothing to do with hydrogen concentration. If taste matters more to you than plate longevity, spring water is fine occasionally, just plan to descale more often.
